Grape Berry Ripening

In grapes, the ripeness variability is greatest at the onset of ripening (véraison) and is characterized by the coexistence within the same cluster of berries of distinct ripening states (Green Hard [GH], Green Soft [GS], Pink Soft [PS], and Red Soft [RS]). Yet, this inherent variability, also called ripening asynchrony, tends to be minimized near the maturity stage. This suggests a compensatory mechanism responsible for more uniform ripening within the cluster. This natural recovery mechanism, which is cultivar-specific and altered by environmental factors, might hold the key to a better understanding of the control of grape berry ripening.


The Department of Horticulture and the Department of Crop and Soil Science have teamed up to offer the public a unique look into farming best practices, pest management and sustainable living-through a series of webinars given by faculty and other experts involved with OSU.

The viticulture webinars in this series are co-sponsored by the Oregon Wine Research Institute, whose mission is to engage, support and lead multidisciplinary and multi-institutional research, deliver knowledge and education related to vineyard and winery management, and improve the quality of Oregon grape and wine production.
